Sara Monk-Rivera, RDN
Sara Monk-Rivera, RD is a registered dietitian, wife, mother to three young children, and author whose calling in life is to help her client's live healthy, fulfilling lives. Sara received her Bachelors of Science from Montclair State University in Nutrition and Dietetics and completed her Dietetic Internship thorough the University of Houston where she completed rotations at Hackensack University Medical Center, St. Joseph's pediatric outpatient clinic, a school food service setting, and a private practice with a Naturopath practitioner. Sara is the author of The Gestational Diabetes Cookbook and co-author of Dash Diet for Renal Health. Sara is a member of the Institute for Functional Medicine. Sara has a holistic approach to nutrition where she believes the Standard American Diet is contributing to Americans poor health and that we all need to be eating more real and whole foods. Sara founded Whole Nutrition Center to help you find freedom from chronic health conditions and harmful fad dieting by developing tailored nutrition plans to meet your individual needs and counseling focused on behavior modifications. Sara has worked with hundreds of clients and provides them with realistic solutions and nutrition plans consisting of real, whole foods- the way nature intended to feed us! She specializes in weight loss, digestive health, disease prevention and wellness, womens health and pregnancy and postpartum. She sees patients with various medical conditions including diabetes, hypertension, hyperlipidemia, and digestive issues. Sara believes in the power of mindful eating and that a healthy relationship with food and your body can truly allow you to transform your lifestyle and wellbeing.
Enzo Rivera, MPH, CHES
Enzo Rivera, MPH, CHES has a Bachelors of Science in Nutrition and Dietetics and a Masters of Public Health with a community health education concentration from Montclair State University. He believes that real, whole nutrition plays a key factor in staying healthy and preventing disease. Enzo co-founded Whole Nutrition Center to help people achieve the healthiest version of themselves, while taking into consideration that there are many factors that can impact our health including the environment, economic stability, education, healthcare, etc. Enzo is the Chief Nutritionist at the City of Passaic's Women, Infant and Children's program (WIC). He specializes in pediatric, pregnant, and postpartum nutrition counseling. In his spare time, he enjoys spending time with his wife and three kids, trying new recipes, and exercising.


Marylou Fernandes, RDN, CDCES

Marylou Fernandes completed her Bachelor of Science in Nutrition and her Dietetic Internship from Rutgers University in 2018. Her interest in nutrition started in college when she began focusing on ways she could improve her own health as well as the health of her loved ones. Marylou’s passion in nutrition grew as she began helping others achieve a healthier lifestyle by incorporating feasible and sustainable changes in their meal choices to optimize their overall health and wellbeing. After college, Marylou applied her knowledge in a variety of health-care setting including in-patient hospitals, acute rehabs, subacute rehabs, and nursing homes. While working in these settings, she assisted individuals from all ages and backgrounds and worked with many comorbidities including diabetes, heart disease, stroke, kidney disease, gastrointestinal disease, and cancer. Marylou’s experiences piqued her interest in diabetes education, leading her to become a Certified Diabetes Care and Education Specialist (CDCES). Marylou believes in using food to heal the body and aspires to help clients make healthy changes that fit their lifestyle and continues to provide them with resources to achieve their personal health goals.
Stacey Pennimpede, RDN

Hi! I’m Stacey Pennimpede, a registered dietitian, mom, and nutrition educator with a functional, whole-person approach to health. I have lived in New Jersey my whole life and enjoy walking, yoga, and swimming. Inspired by my personal experience supporting my daughter with a rare metabolic condition through nutrition and lifestyle interventions, I have seen firsthand the profound impact that individualized, root-cause care can have on long-term health.

As a registered dietitian at Whole Nutrition Center, I work collaboratively with a team of knowledgeable RDN professionals and see clients across the lifespan, from children through adulthood. I specialize in functional nutrition, addressing a wide range of conditions including—but not limited to—gut health disorders such as SIBO, dysbiosis, and IBS; women’s health concerns including perimenopause and menopause; thyroid conditions; and cardiometabolic conditions such as diabetes, high cholesterol, and high blood pressure. I also integrate evidence-based nutraceuticals when appropriate to support individualized care plans. My approach extends beyond food alone, incorporating key lifestyle factors such as stress management, sleep quality, movement, and overall daily habits to support optimal health and resilience. With experience in food service and the development of personalized wellness programs, I am passionate about empowering individuals and families to build sustainable, realistic health practices. My philosophy is rooted in creating a strong foundation for wellness through nourishing foods, a clear mind, and a resilient body—helping clients make healthy living both achievable and meaningful.
Claire Callaghan, MS, RDN
Claire Callaghan is a Registered Dietitian with a Bachelor of Science degree in Human Nutrition, Foods and Exercise from Virginia Tech and a Master of Science degree in Clinical Nutrition from Rutgers University. She completed her dietetic internship at West Palm Beach VA Medical Center before gaining extensive inpatient clinical experience at Overlook Medical Center, where she managed a wide range of health conditions, including diabetes, kidney disease, cardiovascular disease, weight management, gastrointestinal disorders, and pediatric eating disorders.
Claire is passionate about empowering individuals to make positive, long-term changes that promote overall health and well-being. She has a deep understanding of the complex nature of eating disorders and disordered eating and is dedicated to helping clients rebuild a healthy relationship with food and their bodies. Her approach to nutrition counseling is rooted in evidence-based practices, offering realistic, sustainable, and personalized recommendations tailored to each client’s unique needs.
Claire prioritizes building trust with her clients and fostering a supportive environment that encourages growth and engagement. She is committed to addressing not only physical health but also mental and emotional well-being through compassionate care and individualized nutrition strategies.

Rachel Sellen, MS, RDN

Rachel Sellen MS RDN, is a caring Registered Dietitian Nutritionist, a mom of two young children, as well as a certified yoga teacher. She earned her Bachelor of Science in Nutritional Sciences from The Pennsylvania State University and completed her dietetic internship at the Maria Fareri Children's Hospital in Valhalla, NY. Rachel obtained her Master of Science Degree in Health Education from Arcadia University.
She has gained extensive clinical experience at The Children’s Hospital of Philadelphia and specialized in integrative nutrition at The Center for Discovery in Monticello, NY. Rachel also has experience in private practice and corporate wellness. With over 8 years of experience, she works with both pediatric and adult populations, specializing in chronic disease prevention, women’s health, picky eating, hyperlipidemia, chronic gastrointestinal conditions such as IBD, IBS, celiac disease, and food allergies/sensitivities.
Rachel’s nutrition philosophy centers on the belief that food is meant to nourish our bodies and bring joy to our lives. Her hope is to inspire clients to develop a healthy relationship with food.

Angelica Dolley is a highly skilled and detail-oriented Office Administrator with over 5 years of experience in streamlining nutrition office operations and ensuring the smooth functioning of day-to-day administrative tasks. Known for her organizational prowess, Angelica excels in managing office resources, coordinating schedules, and supporting team members to achieve efficiency and productivity. In addition to her administrative expertise, Angelica is also dedicated to fostering a positive and collaborative work environment. She is passionate about creating a workspace that supports both productivity and employee well-being. Outside of the office, Angelica enjoys spending time with her sons and family! She is always looking for new ways to improve her skills and contribute to her professional and personal growth.
